One of the holiday favorites in our home is Buckeye Balls. We make them every Christmas. These are easy to make and even younger children can get involved in the fun.

Ingredients:

1 ½ cups creamy peanut butter
½ cup softened butter or margarine
1 teaspoon vanilla extract
1 16-ounce package confectioners (powdered) sugar
1 12-ounce package semisweet chocolate chips
4 tablespoons solid shortening (Crisco or similar brand)

Also needed:

Toothpicks
Wax paper

Directions:

Line a cookie sheet with wax paper.

In a medium-size bowl, mix with hands – peanut butter, softened butter or margarine, vanilla, and powdered sugar – to form a smooth dough. Mixture should be very stiff.

Shape dough into balls, using approximately 2 teaspoonfuls for each. Place each peanut butter ball on the wax paper and set cookie sheet into refrigerator when done.

In the top of a double boiler over simmering (not boiling) water, melt chocolate chips and shortening together. When chocolate is smooth, pour into a small ball.

Remove peanut butter balls from refrigerator. Insert a toothpick into each peanut butter ball and dip into melted chocolate, coating approximately three fourths of the ball. Return the peanut butter ball to the wax paper. When all peanut butter balls are coated, return the cookie sheet to the refrigerator for approximately 30 minutes.

When the chocolate is set, store the peanut butter balls in a plastic container, separating each layer with wax paper.
